Walnut-Hemp Taco “Meat”

Walnut “meats” are a staple of the raw foods kitchen, in particular flavorful and spicy “meats” like taco or curry.
Well we’ve just turned that up a notch here at Hemp Bistro, because with the addition of hemp seed not only do you get an extra dimension of flavor that really adds to the realistic taste and mouth feel of this “meat,” but also added nutrients.
Today we are making the “taco” meat. Stay tuned for the curry recipe!
You will need a dehydrator or a low-temp oven to make this delicious “meat” that can be used for taco salads, lettuce leaf tacos, taco pizzas and a whole bunch of recipes where ground beef is especially tasty (but this is tastier and better for you!, enjoy!)
Walnut-Hemp Taco Meat
1 cup of raw walnuts, soaked for at least 2+ hours
1/2 cup of dry shelled raw hempseed
1 roma tomato
1/4 cup onion
1-2 cloves of garlic
1 tbs fresh chopped cilantro
1 or more teaspoon of new mexican hot chili + any other chili you would like to add based on your heat preferences
1 tsp braggs aminos
1 tbs red miso
1 tbs lemon juice
Process everything in food grinder or food processor. Spread on dehydrator tray on parchment sheets or dehydrator sheets and dehydrate for 2 hours at around 115 degrees. ”Stir fry” on the tray one hour into the dehydration process to evenly “uncook” all of the meat. The meat is ready when it looks like ground beef, a bit darker and dryer than when you put it into the dehydrator.
